Domaine Naturaliste Sauvage Sauvignon Blanc Semillon is three parts Sauvignon Blanc and one part Semillon. The fruit is grown at the cooler southern end of Margaret River.
Both varieties are well adapted to the vineyard's gravelly soils and maritime climate. The Sauvignon Blanc contributes fragrance, the Semillon texture.
The name Sauvage refers to its wild fermentation. The grapes ferment in French oak puncheons which bring an ingress of oak elements, while preserving freshness.
The wine matures for 10 months on its yeast sediment, a technique known as sur lie (on lees). The yeast cells break down, adding depth and complexity to the taste.
Straw green, Domaine Naturaliste Sauvage Sauvignon Blanc Semillon has bold fruit flavours, unexpected richness, and depth of flavour. Cellaring potential is five years.
